The paint on the lettering has faded with time and id like to re paint it but I was wondering what type of paint would be the best to use to suit all types of weather? Many thanks!

I would use something like Hammerite Smooth, presumably in Gold. Failing that I would use Humbrol Enamel paint, again in Gold.
You will need to get any old flaky paint off the headstone before you apply the new paint.
